Tonight's Dinner: Cow Heads

The town square in mostly empty during the day. There are a few snake charmers and henna artists. But then, the place comes alive in am matter of 1/2 hour. The merchants come in, pulling their portable restaurants on carts and they set up venue after venue of freshly made delicacies. People stroll around and have something here and something there and stop at anther place for a cup of tea or a glass of juice. There is no alcohol. But cows' heads are in high demand. The heads are cooked in a broth which is poured in to a bowl. Bread is served on the side and pieces of fresh are added to the base. Once I got over the visual image of the dead cow heads, the meal was delicious.
