When I was young, my parents struggled financially, just
like everyone else. They had six kids in
seven years. My father worked all day as
a credit collector and put himself through night school to earn a law
degree. After he graduated, he set up a
law private practice that took some time to get off the ground. My mother had
limited resources and worked very hard to make every meal nutritious and
enjoyable. Most of the things she made
were good. And as we got older, she became
an outstanding cook. But in our younger days, some things were just too hard to
eat. Some of the things that I ate as a kid are completely and forever off my
list now:
- Applesauce
- Bologna
- Campbell’s Chicken noodle soup
- Canned bake beans
- Canned carrots
- Canned string beans
- Cheese Whiz
- Chocolate pudding from a box
